Visiting home for the first time in two years has been both relaxing and refreshing. Time with family and friends has always been special, but living far from home makes it even more precious.
During my short visit, my dad and I baked together—just like we used to when I was a kid. He’s the one who first taught me my way around the kitchen, and I’m sure that’s why I love baking to this day.
Lately, my parents have switched to a healthier diet, cutting out carbs, seed oils, and unhealthy fats. My dad has been experimenting with recipes, and he was excited to share this healthy “flatbread” with me. It’s simple, versatile, and pairs well with eggs, meats, or anything you like!

Dad’s Healthy Cheesy Garlic Flatbread
Notes from Dad:
“I like to sauté the garlic until it just starts to turn golden—it brings out more flavor and adds extra depth to the flatbread.
“You can blend the Parmesan with the other ingredients, but I prefer sprinkling it on top.”
Ingredients:
16 oz cottage cheese (higher fat works best)
4 eggs
4 cloves of garlic
1/2 cup grated Parmesan cheese (freshly grated for best flavor)
Pinch of salt
Pinch of pepper
Instructions:
Preheat & Prep:
Preheat the oven to (375°F) 190°C.
Line a sheet pan with parchment paper and spray with avocado or olive oil.
Prepare the batter:
Grate the Parmesan cheese and set aside.
Sauté garlic until lightly golden, set aside.
Blend cottage cheese, eggs, garlic, salt, and pepper until just combined
Pour the mixture onto the prepared sheet pan, spreading evenly.
Sprinkle Parmesan cheese on top.
Bake & Cool:
Bake for 25–30 minutes, checking at 25 minutes. It’s ready when the top is golden and the edges are crisp. Removing it too early may result in a slightly soggy bottom.
Serve warm or at room temperature. Enjoy as is, with eggs, meat, or any other topping of your choice!
